Back in 2020, during covid, we took a moment to ask ourselves a question – As chefs trained in the fine dining scene, what do we truly want to be doing in the post-covid era, and with whom do we genuinely want to spend our time? We then had Muni as the answer to that question.
2 years, we have learned and reflected a lot. Amidst these ever changing times, we find ourselves pondering the same question again. We’ve built flavours and ethos over the past 2 years, this time, we want to go a step further and develop a culture. This culture doesn’t pertain to the culinary style of a specific country, but rather a broader perspective on the relationship between food and people.
We want to be able to deeply contemplate each of our choice : sources, timing, context, and solutions, and incorporate the insights into the experience we provide. Many of our revered predecessors have tirelessly cultivated this path for decades. Having the privilege of standing on the shoulders of these giants, we too ask ourselves – What kind of experience can we offer theses days, making it a genuine fine dining experience?
For us, the finest hospitality remains that pure intent to build connections with people through food and drinks. How to protect and maintain this intent so that it does not become perfunctory is something we have been thinking about.
You might have noticed that Muni became more stringent at some point, placing a greater emphasis on reservations and commitments. This is because we want all our guests to recognise that the fine experience we offer is the result of a dedicated group of people, from small farmers to suppliers to chefs to frontline staff, every individual is deeply committed. Only with such dedication can we deliver our intent to the table.
In this age of scattered attention, why do we still adhere to this challenging dining style? Because we’ve always remembered one thing – people should always be treated as and end in themselves and not as a means. We believe this is the essence of hospitality, towards both customers and those who work behind it.
These beliefs might not manifest overtly on the dining table, yet they represent the farthest reach of a chefs initial heart can go.
